At Kinyōbi, the kitchen moves between precision and pleasure – a place where Japanese craftsmanship meets indulgence, and where exceptional produce is treated with both reverence and curiosity.
The menu unfolds across two rhythms. You can explore it freely, choosing dishes à la carte for a more spontaneous and relaxed experience. Or you can settle into one of our curated set menus – Kinyōbi Classics or the Deluxe Kinyōbi Omakase – offering a longer, more immersive journey through the Kinyōbi flavour universe.
At the heart of Kinyōbi’s kitchen is a close collaboration between culinary director Will King Smith and head chef Adrien Norwood. Former colleagues at Geranium, where they worked as head chef and sous chef, they now reunite to shape a shared vision: working with the world’s finest ingredients, guided by Japanese technique, and driven by a desire to create something both refined and welcoming – for any occasion.

The foundation of our kitchen is simple: uncompromising quality.
Every cut of meat and every piece of fish is carefully sourced for its flavour, texture, and integrity – selected not only for excellence, but for how it responds to time, technique, and fire.
A central part of our approach is our in-house dry ageing programme, where both fish and meats are matured to deepen flavour and complexity. As you enter the restaurant, you are met by the ageing cabinets themselves – surrounding the space and offering a glimpse into the process. Here, guests can observe, explore, and draw inspiration, even selecting the very cuts that will later appear as nigiri, sashimi, or from the grill.
Our Wagyu comes from Kagoshima Prefecture in southern Japan – renowned for its intense marbling, buttery richness, and delicate texture. Danish free-range Angus veal offers a clean, refined sweetness, while Simmental beef from retired Spanish dairy cows brings depth, character, and a beautifully developed flavour.
From the sea, our tuna is sourced from Balfegó in Spain and arrives the day after landing – pristine, rich, and deeply satisfying. Trout from southern Norway and Danish yellowtail are raised in carefully controlled environments, ensuring clarity of flavour, purity, and a lighter environmental footprint.
Everything is handled with precision and respect – guided by Japanese technique, yet always in service of taste.

While sushi and grill form the core, the menu extends far beyond.
A generous selection of snacks, small plates, and yakitori introduces a more playful and comforting side of the kitchen. Dishes like crisp chicken karaage, lobster croquettes with sushi rice, and gratinated scallops offer familiar pleasures, reinterpreted with the same care and attention as our more refined offerings.
These dishes bring balance – softening the formality of luxury ingredients with warmth, texture, and a sense of ease. It is food designed not only to impress, but to invite. To make Kinyōbi a place for both special occasions and everyday indulgence.
Lunch at Kinyōbi
During the day, Kinyōbi offers a lighter expression of the kitchen.
The Kinyōbi lunch set has been recognised by food critic Ole Troelsø in Børsen (February 2026), who noted the depth and generosity of flavour – highlighting a miso soup “rich with aromatic herbs and generous pieces of silky, creamy tofu,” and describing the overall experience as “something close to a steal, considering you can enjoy such a well-executed lunch in these surroundings for 175 DKK.”
